Late evening Indy's?

Good afternoon all. Any well reviewed independents work later hours? Will be in town next week for business and will not be available til 7P?

Two things puzzle me.
When did 7pm become "late night" and why would there be an issue with providers not working at that time?
Does this mean if I stay up till 11pm, I'm considered a party animal? lol

Providers can work whenever they want and some may want to spend time alone, with the friends or family in the evening/night. To each their own. That's the beauty of being Indy, you set your own hours, right?
